Great question.

According to the Catholic Encyclopedia, the Book of Enoch merely fell out of favor with the early church patriarchs for unknown reasons.  The text became obscure and didn't make the cut into what eventually became codified as the canonical texts of the bibles.

While we often caution against wikipedia as a source, the article on the Book of Enoch is well-sourced, thorough, and technical in nature, if you would like a linguistic and philological look at the topic.
